I love soup!

Cold soups, such as this vichyssoise, are great for a work lunch or a lite dinner. Pair this vichyssoise with a salad loaded with grated root vegetables such as parsley root, carrots, and/or beets and you have a fabulous meal for yourself and the microbes that reside in your gut.



  • 2 tablespoons extra virgin olive oil
  • 2 leeks, white part sliced thin
  • 1 onion, diced
  • 2 white potatoes (white thin skin and kept skin on)
  • 3 cups water
  • Sea salt
  • 1/2 cup yogurt
  • 2 tablespoons chives, chopped


  1. In large saucepan sauté the leeks and onion in the olive oil for 4 minutes
  2. Add potatoes and water to the saucepan, bring to a boil then turn the heat down to simmer for 20 minutes until potatoes are tender
  3. Once potatoes are tender turn off burner and add yogurt to saucepan
  4. Blend the soup with a hand blender, add sea salt to taste and chill
  5. Once chilled serve topped with chives
