Sweet Potato Salad

Potatoes are certainly on my list of top ten foods and may even be in the top five. Even the white version is pretty amazing but for this recipe we feature the sweet potato. The brilliant orange color of the sweet potato indicates they are rich in beta-carotene. They are also a great source of fiber as well as vitamin C.

For me potatoes are a comfort food. Pairing potatoes with salad gives me the comfort of the potatoes and all the goodness of a salad. It is a win win for me. Give this recipe a try and see if you don’t agree.

Sweet Potato Salad


  • 3 medium sweet potatoes, diced medium
  • 2 tablespoons extra virgin olive oil
  • Sea Salt
  • Fresh ground black pepper
  • 1/2 teaspoon rosemary
  • 2 avocados, diced
  • 5 ounces of mixed greens
  • 2 tablespoons dulse flakes (optional)
  • Lemon Garlic Dressing


  1. Heat oven to 400°
  2. Toss diced potatoes with extra virgin olive oil, season with sea salt, fresh ground black pepper and rosemary, pour onto a cookie sheet and put in the oven to roast for 25 minutes flipping the potatoes halfway through cook time
  3. Roast sweet potatoes until lightly browned
  4. While potatoes are roasting make the lemon garlic dressing
  5. Toss mixed greens with lemon garlic dressing
  6. On four plates arrange the mixed greens and avocado
  7. Once sweet potatoes are roasted put a 1/4 of the potatoes on each plate in the center of the greens, sprinkle with dulse flakes (if using) and serve
