Radish Greens Soup

Radishes are a vegetable you want to get more of in your diet especially if you want greater vitality. Even as great as radishes are let’s not overlook the greens that top those radishes. Radish greens are a wonderful food as well and can be used similar to other greens.

You can add them to your salad, saute them with garlic for a side dish or whip them up into a pesto. I’ve decided to make them into a delicious soup. Give this Radish Greens Soup a try and I think you too will decide that radish greens should be eaten and not thrown away.

Radish Greens Soup


  • 2 tablespoons extra virgin olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 medium russet potatoes, diced medium
  • 4 cups vegetable broth
  • 1 teaspoon tarragon
  • 2 bunches of radish leaves, washed and chopped
  • Sea Salt
  • Fresh ground black pepper
  • Juice of half a lemon
  • 2 tablespoons dulse flakes (optional)


  1. In a large pot add extra virgin olive oil and sauté onions on medium heat for 4 minutes
  2. Add garlic and sauté a minute more
  3. Add potatoes, vegetable broth and tarragon
  4. Bring soup to a boil then turn the heat down to simmer for 20 minutes
  5. Add radish leaves and simmer 10 more minutes
  6. Turn off heat and blend the soup with an immersion blender
  7. Add sea salt and fresh ground black pepper to taste
  8. Add the lemon juice and serve sprinkled with dulse (if using)
