Niçoise Salad

I find Niçoise Salad to be a smorgasbord for my beneficial gut bacteria.

When it comes to creating a sexy healthy gut microbiome you want to feed your beneficial microbes a variety of foods that they like and what better than the Niçoise Salad. Everything on this salad benefits our gut microbiome and therefore our health and wellbeing.

Give the salad a try and see if it doesn’t become one of your favorite meals.

Niçoise Salad


  • Ingredients
  • 5 ounces mixed salad greens
  • 8 fingerling potatoes, cooked, chilled cut into bite sized pieces
  • 1/2 pound green beans, blanched
  • 4 hard-boiled eggs, shelled and cut into wedges
  • 1 pint cherry or plum tomatoes, cut in half
  • 1/2 cup Niçoise olives
  • 3 cans sardines, drained (Wild Planet are my favs)
  • Dressing
  • 1/2 cup extra virgin olive oil
  • 1/2 cup lemon juice (juice of 2-3 lemons)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon fresh ground black pepper
  • 3 cloves garlic, minced
  • 1 shallot, minced


  1. Instructions
  2. In a jar mix all dressing ingredients and set aside
  3. On 4 plates arrange salad greens
  4. Then arrange potatoes, green beans, hard-boiled eggs, tomatoes, and olives
  5. Top with a fourth of the sardines and serve with dressing
  6. Note: To blanch the green beans bring a pot of water to a boil and set green beans in boiling water for 2 to 3 minutes and then drain green beans and run under cold water to stop the cooking process.
