Who doesn’t love a really good Caesar salad? I certainly do!

A Caesar salad is certainly a better choice than a fast food burger as far as nutrition is concerned however, the downside is that for a salad the Caesar lacks nutrient density. With a couple of additions your Caesar salad will become nutrient dense and fiber rich making it more of a meal to nourish your gut. I call this Caesar Deluxe.

If you want to take the salad even further, feel free to add sardines, chicken, shrimp, salmon  or pumpkin seeds. And if you are vegetarian you can leave out the anchovies in the dressing and add a dash of Tamari. Enjoy!

Caesar Deluxe

Ingredients

    DRESSING
  • 1/3 cup extra virgin olive oil
  • 4 anchovy fillets
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic
  • 1/2 lemon, juiced
  • 1 dash sea salt
  • Fresh ground black pepper
    SALAD
  • 1 Romaine lettuce head
  • 1 15 ounce jar artichoke hearts
  • 6 large spears of asparagus
  • Parmesan cheese

Instructions

  1. Prepare the dressing by putting all ingredients in a food processor and pulsing until smooth
  2. Set dressing aside
  3. Slice Romaine lettuce into 1-inch pieces
  4. Shave asparagus spears with a vegetable peeler using an upside down bowl to steady the asparagus spear
  5. Place Romaine lettuce and shaved asparagus in a large bowl and toss with dressing
  6. Split lettuce mixture on four serving plates, sprinkle with Parmesan cheese, and artichoke hearts and serve
